來自葡萄牙百年名莊 Caves São João 的傳奇系列「Raríssimo」，這支 Sparkling 37 2007 是該系列中最具象徵意義的氣泡酒之一。
「37」代表瓶中長達 37 個月的二次發酵陳釀期，經時間洗禮後呈現出極致細膩的氣泡與層次分明的香氣。

📍 酒莊背景
Caves São João 成立於 1920 年，位於葡萄牙中部 Anadia（安亞迪亞），是 Bairrada 地區最具歷史與代表性的家族酒莊之一。
由 Costa 三兄弟創立，酒莊早期以波特酒與烈酒起家，後期專注於葡萄牙本土靜態酒與氣泡酒生產。
1930 年代，酒莊聘請法國顧問 Gaston Mennesson，將「香檳傳統法（Méthode Champenoise）」技術帶入葡萄牙，
成為國內首批採用傳統瓶中二次發酵法釀造氣泡酒的先驅。
1950 年代推出首款標註「Reserva」的氣泡酒，樹立葡萄牙高端氣泡酒的典範。
1960–1970 年代，酒莊收購 Quinta do Poço do Lobo 葡萄園（約 37 公頃），以石灰與黏土土壤聞名，特別適合高酸品種的氣泡酒栽種。
如今由家族第三代經營，Caves São João 已成為葡萄牙歷史最悠久、藏酒量最龐大的酒莊之一，
